Peanut butter can be one of the most trusted items in your kitchen cupboard. It is always available, ready to spread on a slice of toast and put it in jelly. It is also a good friend for chocolate, making it an important ingredient in many desserts.

 And now that I think about it, I don't know how long ago it was since I bought the peanut butter jar that is now in my cabinet. Is peanut butter... bad? Short answer: yes! Who would have thought that, right? The low moisture content and high fat content give it a very long shelf life. But it will eventually rancid because of the high fat content.

You won't find mold in your peanut butter. That being said, you can still tell that peanut butter is bad for the eyes. Rancid peanut butter will be hard and dry, and may be darker in color. In fact, a clear sign of rancid food is a change in smell. Rancid peanut butter might smell well, not smell like peanut butter (beware of bitter or metallic odors).

How to store your peanut butter will differ depending on the type of product you are dealing with. Refined peanut butter has a longer shelf life due to the addition of stabilizers such as palm oil and hydrogenated oils. These can be stored in a cool and dry place for a while. However, for a long shelf life, you will want to transfer it to the refrigerator after two to three months. 

Natural peanut butter on the other hand does not contain any of these additives, so it is best refrigerated after opened. However, they will keep for a few weeks at room temperature. Are you worried about oil separation? You can forget about making a mess on the counter when you try to add oil to the peanut milk - instead, keep it on the bottom so that the oil distributes well in the pot.

  •  Unopened peanut butter: 6-9 months, no refrigeration necessary
  •  Freshly opened peanuts: 2-3 months in the pantry, 6-9 months in the refrigerator

Natural peanut butter can be stored in the pantry for up to a month, but if you don't plan on eating it quickly, you should refrigerate it for the best taste and texture.
