How long does egg salad last in the  fridge?

We firmly believe that a small egg salad is a real problem, unless you don't know if it's still good to eat. But when it comes to a delicious egg salad, you don't want to rely on the "sniff test" to be the deciding factor. If you're wondering if your egg salad is safe or can spoil it, read on for important safety tips for mayonnaise-based salads.

The basics of egg salad
 
First, let's break down what is common in this classic food. Understanding the ingredients is important to know how they hold up over time.

Hard-boiled eggs:

You might be tempted to freeze your egg salad instead of refrigerating it, but we don't recommend it. The texture will change and the mayonnaise may separate and become liquid. Another option is to save hard-boiled eggs until you are ready to make your salad. According to the USDA, you can store hard-boiled eggs in the refrigerator for up to seven days, in their shells or peeled. Refrigerate eggs within two hours of cooking. 

How to tell if egg salad is spoiled
 
Look for any changes in color, taste, smell and texture. Fresh egg salad should be creamy and soft and fragrant. Spoiled egg salad will smell sour or sulfur like rotten eggs. The texture can be watery or slimy, which can be a sign of bacterial growth. If left for too long, it can develop brown spots and mold. You may also notice small bubbles or fizz when tossing the salad; they are also indicators of microbial growth.
